Breakfasts:
- farm fresh eggs with salsa
- sprouted flour toast with raw almond butter, sprinkled with cinnamon
- soy or coconut yogurt with cinnamon, flax seed meal or unsweetened coconut (some are anti soy, I'm just "selective" and organic soy ;)
- oatmeal (steel cut oats) with cinnamon and honey
- fruit salad
- smoothie
- rosemary sourdough toast with RAW almond butter
- KIND bar if we're headed out the door early
Lunch:
- pita with hummus
- pita with avacado, sprouts, peppers or any other fun veggies
- veggie plate with hummus
- fruits, veggies, yogurt for dip
- breakfast for lunch (a big hit with the kiddos)
- almond butter and jelly (we buy sugar free jelly at Sprouts, It has a bear on it....I'll have to check the name **no artificial sweetener** simply fruit) sandwich on toasted sourdough bread
- salad full of all kinds of veggies and organicville dressing
- carrot/raisin salad (diced apple, grated carrot, box of organic raisins, diced celery, spoon of Veganaise and BRAGGS Sea Kelp seasoning)
- dinner leftovers
Dinner:
- crockpot roast **although yummy these have been eliminated due to cost**
- crockpot chicken **always followed by fresh veggie soup. Chicken bones are placed back in teh crockpot and covered with filtered water, simmered all night, strain and put broth back in crock pot and then I dump fresh diced veggies and herbs in the next morning....easy dinner!)
- sides: salad, mashed potatoes, salad, sauteed veggies, fruit salad, sweet potato bake (honey, nuts and potato slices), apple/pear/turnip bake, steamed veggies, rice or couscous
- taco salad (I add two potatoes and an onion to 1lb ground beef....helps it go further )
- spaghetti with whole wheat pasta or Gluten Free pasta and HUGE meatballs from our grassfed beef
- black bean burritos (beans cook ALLLL day in crockpot with meaty soup bones, YUM!)
- spicy chili
- potato soup
- tortilla soup
Snacks:
- hummus
- yogurt
- fruit and veggies (available any time of day! My only rule for the kiddos is only one of a specific kind a day so they have a variety, otherwise it would be all bananas all the time!)
- blue corn tortilla chips with flax seed dipped in salsa or guacamole
- corn salsa/Texas Caviar/bean salad
- avacado slices
- toast with honey or almond butter
- raw nuts (unsalted) SUPER easy to keep in the car!
- raw sunflower seeds with vegan chocolate chips (again, no soy)
- chocolate bark (vegan chocolate chips with NO soy, bit of coconut oil, crispy rice, chopped nuts and cinnamon)
- power balls (almond butter, agave, chopped nuts, crispy rice and vegan chocolate chips with NO soy). I like to roll them in coconut, the hubby rolls his in crispy rice.
- cup of fresh juice (fruits and veggies, usually kale is snuck in ;)
- hot tea with honey (especially if needing something sweet late at night or feeling snacky but not really hungry)
- Dino Drink (green smoothie) is always a hit with both kiddos!
Out to Eat:
We LOVE Chipotle and their meat is something we are comfortable eating (and VERY MUCH look forward to any chance we get to head down the road to pick up a burrito!!!). Otherwise the kiddos and I follow a Vegan diet when eating out. The hubby isn't quite there yet but isn't far behind. It's SO easy to eat Vegan when out and about. I was surprised at how accommodating restaurants are when you ask for no butter on veggies, no cheese or egg on salad etc. All I have to say is we have a sensitivity to dairy and they are extremely understanding. I pack extra veggies and fruit for the kiddos, we order a salad or veggie plate and life is good. Honestly we don't eat out often due to our budget anyways. The few times we do as just a family is it always Chipotle.**Update for 2011**
Z Pizza is here locally and AMAZING! They have a Vegan Pizza that is fabulous and they also offer a GF crust! Hubby gets a dairy free pizza on whole wheat crust and I share a dairy free pizza on GF crust. They will take ANY of their fabulous creations and modify it to fit our diet needs...woohoo!! and they DELIVER! They cost more but it's worth the extra $$ for our health!
Out with Friends:
If we are going out with friends we make do the best we can. At times we have made acceptations as to not offend or inconvenience the host/hostess but overall we stick with Vegan choices and enjoy good fellowship with friends.....it's not all about the food ;) We NEVER eat dairy....it's not worth feeling sick the next day. Our friends/family understand that isn't just a personal choice but a health issue. We NEVER expect them to accommodate us and if they are serving something we are unable to eat we will plan ahead and bring a dish of our own (with plenty to share ;)**I'm just a mom documenting the food journey my family is on.
